Diplomová práce se zabývá změnou vybraných látek v bramborové hlíze během skladování. Teoretická část je věnována stručnému souhrnu anatomických a chemických vlastností brambor. Dále popisuji faktory ovlivňující obsah sledovaných látek. Pro chemické analýzy byly použity vzorky šesti odrůd a dvou varných typů (AB, A a B), které patřily do tří skupin podle délky vegetační doby (velmi rané, rané a polorané). Cílem bylo sledování vlivu: skladování, varného typu, délky vegetace a kulinářské úpravy na obsah N-látek, aminokyselin a celkového fosforu.

Thesis deals with the change of selected substances in potato tubers during storage. The theoretical part is devoted to brief summary of anatomical and chemical characteristics of the potatoes. It further describes factors influencing the content of controlled substances. For the chemical analysis were used samples of six varieties and two types of cooking (AB, A and B), which belonged to three groups according to length of growing period (very early, early and semi). The aim was to monitor the impact of: storing, cooking type, length of vegetation and culinary presentation to the content of N-substances, amino acids and total phosphorus.
