Annotation Řasy svým nutričním složením s vysokým obsahem proteinů, minerálních látek i vitaminů poutají pozornost jako potenciální zdroj potravin. Avšak jejich využitelnost je omezena přítomností polysacharidů v buněčné stěně. Diplomová práce byla zaměřena na stanovení stravitelnosti mořských a sladkovodních řas. K posouzení stravitelnosti bylo použito hodnocení bílkovin metodou in vitro, jež je založeno na stanovení rozdílu hodnot bílkovin a aminokyselin před a po působení proteolytickými enzymy.
Annotation in English Algae is known as a potential source of food for human due to the high content of proteins with essential amino acids, minerals and vitamins. Their available by reason of present polysaccharide in cell wall is limited. Digestibility of Freshwater Algae and Seaweed was assessment by in vitro analysis. Proteins and amino acids composition before and after proteolytic enzymatic action was evaluated.
