Annotation Pro lidské zdraví jsou velmi důležité vitaminy. Jedním z nich je i riboflavin. Tato diplomová práce je zaměřena na stanovení vitaminu B2 v mléce a mléčných výrobcích. Teoretická část pojednává o vitaminu B2 a o jeho vlastnostech. V praktické části byl vitamin B2 stanovován v syrovém kravském, kozím a ovčím mléce, v pasterovaném a znovu pasterovaném mléce, v mléce obnoveném a v syrovátce. Dále byl stanovován v sýrech a to v tvrdém sýru Eidam, tvarohu, Hermelínu, Nivě, Jadelu a v taveném sýru. Pro stanovení byla použita chromatografická metoda HPLC s UV detekcí.
Annotation in English The vitamins are very important for human healt. One of them it is riboflavin. This thesis is focused on determination of riboflavin in milk and milk products. The teoretical part is about vitamin B2 and about it’s properties. In the practical part riboflavin was measured in a raw milk, raw cheep milk, raw goat milk, pasteurizated milk and in heat treatment milk. In renovated milk and in renovated whey. Then the riboflavin was determined in hard cheese Eidam, curd, Hermelín, Niva, Jadel and in processed cheese. High Performance Liquid Chromatography (HPLC) method with UV-detector was used.

Pro lidské zdraví jsou velmi důležité vitaminy. Jedním z nich je i riboflavin. Tato diplomová práce je zaměřena na stanovení vitaminu B2 v mléce a mléčných výrobcích.
