Annotation Cílem této bakalářské práce je seznámení s nutriční a biochemickou úlohou tuků a olejů ve výživě člověka. V jednotlivých kapitolách je kladen důraz na chemickou strukturu tuků, olejů a minoritních látek v tucích. Je rozebíráno trávení tuků, transport lipidů v krvi a metabolismus lipidů na buněčné úrovni. Pozornost je věnována také výživové hodnotě tuků a jejich spoluúčasti na chorobách kardiovaskulárního systému a zhoubných chorobách.
Annotation in English The aim of the dissertation is to present with nutritional and biochemical work of fats and oils in human nutrition. In several power chaptes is put the accent on chemical structure of fats, oils and minority substances of fats. Were analysed digest of fats, train of lipides in blood and the lipometabolism in cellular level. An attention paided to nutritive quality of fats and their complicity in heart disease and decline.

Cílem této bakalářské práce je seznámení s nutriční a biochemickou úlohou tuků a olejů ve výživě člověka.
