Annotation Tato bakalářská práce se zabývá charakteristikou přírodních antioxidantů (fenolové kyseli-ny, flavonoidy, karotenoidy, glykosidy, kurkuminoidy, a další) a syntetických antioxidantů (BHA, BHT, TBHQ, galláty). Popisuje změny při oxidaci snadno oxidovatelných složek potravin (především tuků). Také jsou zde popsány metody stanovení antioxidační aktivity antioxidantů (DPPH, ABTS, ORAC, FRAP, atd.).
Annotation in English This bachelor thesis deals with the characteristics of natural antioxidants (phenolic acids, flavonoids, carotenoids, glycosides, kurkuminoids, and others) and synthetic antioxidants (BHA, BHT, TBHQ, gallates). The are also described changes in the oxidation of easily oxidised food ingredients, especially fats, and methods for the determination of antioxidant activity (DPPH, ABTS, ORAC, FRAP, TEAC).
