Dlouhodobé skladování je záležitostí, která se týká každé zelené kávy. V této práci byly popsány vhodné podmínky a problémy provázející dlouhodobé skladování kávy. Velký důraz byl kladen na problém vysychání zelené kávy a nalezení cesty, jak tento hmotnostní úbytek určit. K tomu bylo využito znalostí o modelování koncentračních polí a jejich apli-kaci na daný problém.

Long term storage is an issue of green coffee generally. This thesis describes suitable con-ditions as well as difficulties that accompany long term storage. Great stress is laid on a matter of green coffee’s water loss and finding a correct way to measure a weight change caused by it. For this purpose the thesis uses knowledge of concentration fields modeling and an application of them to this issue.
