Annotation Tato práce se zabývá rešerší současných výzkumů o možnostech používání enzymů aminooxidáz k dosažení snížení, či eliminaci biogenních aminů v potravinách. V práci je uvedena obecná charakterizace biogenních aminů, problematika metabolizování a biologických účinků biogenních aminů po pozření jejich vysokých koncentrací. Okrajově se zabývá i otravou histaminem. Také je charakterizován enzym aminooxidáza v několika jejich formách, včetně výskytu a funkcí.
Annotation in English This thesis deals with summary of current researches of possibilities of using amine oxidase enzymes to reduce or eliminate biogenic amines in food. In this thesis there is a general characterization of biogenic amines, also the metabolism and biological effects of biogenic amines after ingesting their high concentrations. It is also mentioned a histamine poisoning. There is a characterization of the enzyme amine oxidase in several of its forms, including occurrence and function.

Tato práce se zabývá rešerší současných výzkumů o možnostech používání enzymů aminooxidáz k dosažení snížení, či eliminaci biogenních aminů v potravinách. V práci je uvedena obecná charakterizace biogenních aminů, problematika metabolizování a biologických účinků biogenních aminů po pozření jejich vysokých koncentrací. Okrajově se zabývá i otravou histaminem. Také je charakterizován enzym aminooxidáza v několika jejich formách, včetně výskytu a funkcí.
