Tato práce se zabývá novými nízkokalorickými sladidly přírodního a umělého původu.
Cílem práce bylo charakterizovat a stručně shrnout nízkokalorická sladidla používaná nebo často diskutovaná v posledních letech. Mezi nejdiskutovanějšími jsou stévie, acesulfam draselný, cyklamát a aspartam. Mezi nejnovějšími jsou neotam a advantam.
V práci jsou diskutovány jejich přínosy a rizika z pohledu zdraví při jejich konzumaci. Zda jsou vhodná pro osoby trpící diabetem a zda opravdu podporují snižování hmotnosti, nebo naopak představují jistá zdravotní rizika.
Uvedeny jsou možnosti praktického využití sladidel a vhodnost při nahrazování cukrů při výrobě potravin a nápojů.

This thesis focuses on new low-calorie sweeteners of natural and artificial origin. The aim of the study was to characterize and summarize briefly the low-calorie sweeteners commonly used or frequently discussed in recent years. Among the most debated ones are stevia, potassium acesulfame, cyclamate, and aspartame. Among the newest ones are neotame and advantame.
This thesis discusses their benefits and risks from a health perspective when consumed. It examines whether they are suitable for individuals with diabetes and whether they truly support weight reduction or, conversely, pose certain health risks.
The possibilities of practical utilization of sweeteners and their suitability for replacing sugars in food and beverage production are also presented.
