Annotation Bakalářská práce se zabývá charakteristikou rostlin čeledi růžovité a jejich antioxidačními vlastnostmi. Teoretická část je zaměřena na popis vybraných rostlin (řepík lékařský, kontryhel obecný, jahodník obecný, ostružiník křovitý), antioxidantů a metody stanovení antioxidačního účinku. Cílem experimentální části bylo určit množství polyfenolických látek v extraktech rostlin s pomocí Folin-Ciocalteuova činidla, a antioxidační aktivitu dvěma spektrofotometrickými metodami, s činidly DPPH a ABTS, a zjistit vliv teploty na jejich antioxidační aktivitu.
Annotation in English The bachelor thesis deals with the characteristics of Rosaceae family plants and their antioxidant properties. The theoretical part focuses on the description of selected plants (agrimony, lady's mantle plant, strawberry and blackberry plants), antioxidants and methods for determining the antioxidant effect. The experimental part is aimed to determine the content of polyphenolic substances in plant extracts using Folin-Ciocalteu reagent, and antioxidant activity by two spectrophotometric methods, with DPPH and ABTS reagents, and to determine the effect of temperature on their antioxidant activity.
