Annotation Bakalářská práce se věnuje mikrobiologickým rizikům, popisuje nejčastěji se vyskytující patogenní mikroorganismy v potravinách a je zaměřena na výskyt nových nebo nově se objevujících patogenních mikroorganismů přenosných potravinami a vodou. Podrobně charakterizuje patogenní bakterie, mikromycety, viry, priony a parazitické prvoky. Práce se věnuje také metodám jejich detekce a možnostem prevence.
Annotation in English The bachelor thesis deals with microbiological risks, describes the most common pathogenic microorganisms in food and is focused on the occurrence of new or emerging pathogenic microorganisms transmitted by food and water. It characterizes in detail pathogenic bacteria, micromycetes, viruses, prions and parasitic protozoa. The work also deals with methods of their detection and prevention options.

Bakalářská práce se věnuje mikrobiologickým rizikům, popisuje nejčastěji se vyskytující patogenní mikroorganismy v potravinách a je zaměřena na výskyt nových nebo nově se objevujících patogenních mikroorganismů přenosných potravinami a vodou. Podrobně charakterizuje patogenní bakterie, mikromycety, viry, priony a parazitické prvoky. Práce se věnuje také metodám jejich detekce a možnostem prevence.
