Annotation Teoretická část diplomové práce zahrnuje výrobu zeleného čaje s bližším zaměřením na čaj matcha, dále uvádí chemické složení se zaměřením na obsah minerálních prvků. Praktická část je zaměřena na stanovení obsahu minerálních prvků v čajích matcha a jejich jednotlivých výluzích pomocí metody ICP-MS a spektofotometrické stanovení fosforu. Čaj matcha je bohatý zejména na prvky na Mn, Cu, Mg, P.
Annotation in English The theoretical part of the thesis includes the production of green tea with a closer focus on matcha tea, followed by the chemical composition focusing on the content of mineral elements. The practical part is focused on determination of mineral elements content in matcha teas and their individual extracts by the ICP-MS method and spectrophotometric determination of phosphorus. The green tea is rich in Mn, Cu. Mg, P.
