Annotation Antioxidační účinky vína jsou spojovány s celou řadou zejména fenolických látek ve víně obsažených z nichž nejznámější je 1-(3,5-dihydroxyfenyl)-2-(4-hydroxyfenyl)ethen neboli resveratrol. Cílem této práce je shromáždit dostupné informace o obsahu antioxidantů v různých druzích bílého a červeného vína a na základě těchto údajů provést porovnání jejich antioxidačních účinků.
Annotation in English Various phenolic compounds (the best known is 1-(3,5-dihydroxyphenyl)-2-(4-hydroxy-phenyl)ethene alias resveratrol ) from grape-vine are related to antioxidant effect of wine. The information about antioxidants content in several kinds of red and white wine is presented in this thesis. The comparsion of wines was caried out on the bases of this data.
