Annotation V předkládané práci je rozebrán význam bílkovin pro lidský organismus a jejich výskyt v potravinách a jsou popsány vlastnosti aminokyselin. Dále je uveden přehled metod používaných pro stanovení aminokyselin. Je vysvětlen princip hydrolýz při stanovení a jsou popsány některé chromatografické metody, především kapalinová chromatografie. V poslední kapitole jsou uvedeny vlastnosti a metody stanovení využitelného lysinu.
Annotation in English There is an importance of proteins for human organism and their appearance in food and there are described characteristics amino acids in the first part of this work. Further there is the list of the methods used for determination of amino acids. There is explained principle of hydrolysis for determination amino acids and there are described some chromatography methods, mainly liquid chromatography. The last part of this work describes the characteristics and the methods used for determination of available lysine.

V předkládané práci je rozebrán význam bílkovin pro lidský organismus a jejich výskyt v potravinách a jsou popsány vlastnosti aminokyselin.
