Annotation Cílem této bakalářské práce je popsat biologicky aktivní látky rajčat. Mezi tyto látky lze zařadit vitaminy rozpustné v tucích, vitamin C, {β}-karoten, lykopen. Z lipofilních vitaminů se v rajčatech nachází vitamin A a vitamin E. Je možno sem také zařadit {β}-karoten, který je prekurzorem vitaminu A. Biologicky aktivní látky se nejčastěji stanovují metodou HPLC (High Performance Liquid Chromatography). Tato metoda má široké použití a poskytuje velmi dobré výsledky.
Annotation in English This bachelor work describes biologically active substances of tomatoes. In tomatoes, there can be found some fat vitamins, vitamin C, {β}-carotene and lycopene. From fat vitamins there are vitamin A and vitamin E. {β}-carotene is an antecedent of vitamin A. Biologically active substances are the most frequently determined by the method HPLC. This method has a wide range of usage. It also affords very good results.

Cílem této bakalářské práce je popsat biologicky aktivní látky rajčat. Mezi tyto látky lze zařadit vitaminy rozpustné v tucích, vitamin C, {β}-karoten, lykopen.
