Annotation Předkládaná bakalářská práce je rešerše na téma falšování potravin. Poskytuje informace o způsobech falšování potravin a jejich odhalení. Dále poskytuje informace o vybraných analytických metodách, které jsou nejvíce využívány při prokazování autenticity potravin. V současnosti jsou využívány zejména metody molekulární biologie. Cílem práce je popis metod časově a ekonomicky méně náročnějších. K těmto metodám lze zařadit spektrální a chromatografické metody. Zaměření práce je především na potraviny živočišného původu.
Annotation in English This bachelor thesis presents literal research into food fraud. Moreover it provides information on various types of food frauds and methods for detecting them. It further focuses on selected analytical methods most which are used to assess food authenticity. Nowadays, these are mainly molecular biology methods. The aim of the thesis was to describe those methods which are both less time-consuming and economically demanding, such as spectral and chromatographic methods. The thesis was primarily focused on animal origin food.
