Annotation Práca sa zaoberá riadením alergénov v potravinárstve aich významom v potravinovom reťazci. Keďže prevalencia a závažnosť ochorení stále narastá, má to vplyv na potravinársky priemysel a taktiež na spotrebiteľa, ktorý má právo dozvedieť sa o výrobku čo najviac na základe deklarovaného zloženia na jeho obale. V záujme dostupnosti príslušných informácií určila Európska komisia 14 potravinových alergénovapotraviny, ktoré ich obsahujú v akomkoľvek množstve, musia byť zreteľne označené na obaloch potravín. Povinnosť deklarácie alergénov na obaloch potravín stanovuje Nariadenie Európskeho parlamentu Rady (ES) č. 1169/2011 v platnom znení.Výroba produktov, obsahujúcich alergény vyžadujúce deklaráciu, musí byť prevedená tak, aby sa čo najväčšom možnom rozsahu minimalizovala krížová kontaminácia. Riadenie alergénov v potravinárstve je možné z viacerých hľadísk.
Annotation in English The thesis deals with the management of food allergens and their purpose in the food chain. As the prevalence and importance of the disease keeps increasing, it has an impact on the food industry and also on the consumer who has the right to be informed about the product as much as possible based on the declared composition on its packaging. In order to make the information available, the European Commission has identified 14 food allergens. Foods containing them in any quantity must be clearly marked on the food packaging. The obligation to declare allergens on food packaging is laid down in Council Regulation (EC) The production of products containing allergens requiring a declaration must be carried out in such a way as to minimize cross-contamination as much as possible. Allergy management in the food industry is possible in several ways.
