Annotation Bakalářská práce pojednává o chitosanu a jeho derivátech jako významných biopolymerech pro řadu praktických aplikací. V první části práce jsou popsány a klasifikovány běžné polysacharidy, dále je charakterizován chitosan, jeho struktura a vlastnosti. Druhá část obsahuje přehled vybraných chitosanových derivátů a zabývá se praktickým využitím těchto látek, zejména ve zdravotnictví, farmacii a potravinářský průmysl.
Annotation in English The bachelor thesis discusses the chitosan and its derivatives as important biopolymers for many practical applications. In the first part common polysaccharides are described and classified. The attention is also paid to the characterization of chitosan, its structure and properties. The second section includes the overview of selected chitosan derivatives and deals with their practical use, especially in health care, pharmaceutical and food industry.
