Annotation Biogenní aminy jako produkty metabolismu mikroorganismů jsou velmi diskutovaným tématem v poslední době. Cílem této práce je charakterizovat biogenní aminy, popsat reaktivitu biogenních aminů s dalšími sloučeninami a reaktivitu sloučenin obsahujících amino skupinu. Jelikož obsahují reaktivní aminoskupinu, mohou interagovat s velkým množstvím látek, čehož může být kladně využíváno. Hlavním cílem bakalářské práce je prostudovat dosud popsané reakce biogenních aminů s vybranými sacharidy. Byly popsány reakce, kterých se účastní biogenní aminy a sacharidy mechanismem Pictet-Spenglerovy kondenzace a Maillardovy reakce.
Annotation in English Biogenic amines as products of the metabolism are a largely discussed theme in these days. The aim of this bachelor's thesis is to characterize biogenic amines, describe the reactivity of biogenic amines with other compounds and the reactivity of compounds involving other amines groups. Because they contains reactive amino group, biogenic amines can react with a lot of other substances. The reactivity with other substances could be positively ap-plied. The main aim of this bachelor's thesis is to examine the reactions of biogenic amines with chosen carbohydrates, which were already described in these days, such as that ones, in which biogenic amines and carbohydrates participate and the reaction course runs through the Pictet-Spengler condensation and Maillard reaction.
