Bakalářská práce je zaměřena na methanol v jablečných destilátech. V teoretické části je pojednáno o vlastnostech methanolu, jeho tvorbě, využití, výskytu, metabolismu a účincích v lidském těle, dále o legislativě v oblasti lihovin, ovoci pro výrobu destilátů, alkoholovém kvašení, destilaci, chemickém složení destilátů, vadách destilátů a metodách ke stanovení methanolu. V praktické části byly stanoveny koncentrace methanolu v jablečných destilátech. Analýza těchto destilátů byla provedena plynovou chromatografií s plamenovým ionizačním detektorem (GC/FID).

Bachelor's thesis is focused on methanol in Apple spirits. The theoretical part is dealt with the properties of methanol, its creation, usage, distribution, metabolism and effects in the human body, also on legislation in the area of spirit drinks, fruit for the production of spirits, alcoholic fermentation, distillation, chemical composition of spirits, quality defects of the spirits and the methods for the determination of methanol. In the practical part of the methanol concentrations were determined in the Apple spirits. Analysis of these spirits were performed by gas chromatography with a flame ionization detector (GC/FID).
