Annotation Tato diplomová práce se zabývá sledováním obsahu biogenních aminů a polyaminů ve sladech a sladových extraktech. Stanovení obsahu BA byly podrobeny pevné vzorky sladů (34 vzorků), ale i sladové extrakty (5 vzorků). Hlavním cílem praktické části této práce bylo změřit a stanovit vysokoúčinnou kapalinovou chromatografií zastoupení jednotlivých BA a jejich celkový obsah ve sladech a ve sladových extraktech.
Annotation in English The aim of the current Master thesis was the monitoring of biogenic amine content and polyamines content in selected malt and malt extracts. Moreover, solid samples of malts (34 samples in total) and also malt extracts (5 samples in total) were subjected to the determination of BA content. The main scope of the practical part of this work was to determine by high-performance liquid chromatography the representation of individual BA and their total content in malts and malt extracts.

Tato diplomová práce se zabývá sledováním obsahu biogenních aminů a polyaminů ve sladech a sladových extraktech. Stanovení obsahu BA byly podrobeny pevné vzorky sladů (34 vzorků), ale i sladové extrakty (5 vzorků). Hlavním cílem praktické části této práce bylo změřit a stanovit vysokoúčinnou kapalinovou chromatografií zastoupení jednotlivých BA a jejich celkový obsah ve sladech a ve sladových extraktech.
