Annotation V teoretické části bakalářské práce je charakterizována pohanka setá (Fagopyrum esculetum Moench), její pěstování, chemické složení, vlastnosti a využití. Dále jsou popsány metody pro stanovení antioxidační aktivity s DPPH a obsahu volných polyfenolů pomocí činidla Folin-Ciocalteu. Praktická část bakalářské práce je zaměřena na zjištění vlhkosti, stanovení antioxidační aktivity metodou s DPPH a obsahu volných polyfenolů pomocí činidla Folin-Ciocalteu ve vybraných produktech z pohanky.
Annotation in English The theoretical part of the Bachelor thesis deals with characterization of buckwheat (Fago-pyrum esculetum Moench), its cultivation, chemical composition, properties and use plant as food or feed. Further, the methods are described for the determination of antioxidant activity with DPPH and the content of free polyphenols using the Folin-Ciocalteu reagent. The experimental part of thesis is focused on the determination of dry matter, antioxidant activity using DPPH method, the content of free polyphenols using the Folin-Ciocalteu in selected products from buckwheat.

V teoretické části bakalářské práce je charakterizována pohanka setá (Fagopyrum esculetum Moench), její pěstování, chemické složení, vlastnosti a využití.
