Annotation Tato diplomová práce se zabývá charakteristikou, chemickým složením, zpracováním, využitím a zdravotními účinky rostliny pohanky seté. Praktická část je zaměřena na analýzu jednotlivých částí pohanky, jako kořen, stonek, listy a květ. Dále byly zkoumány pohankové výrobky (slupky, kroupa a mouka). U všech vzorků bylo provedeno stanovení obsahu vlhkosti, dusíkatých látek, tuku a škrobu dle metod uvedených v Nařízení Evropské komise č. 152/2009.
Annotation in English This diploma thesis deals with a characterization, chemical composition, processing and utilization and health effects of common buckwheat. The practical part is focused on the analysis of individual parts of the buckwheat plant, for example a root, footstalk, leaves and inflorescence. Then the buckwheat products (peelings, groats and flour) were exam-ined. The content of the moisture, nitrogen substances, fat and starch was measured in all of the analysed samples, using the methods introduced in the Regulation of the European Commission no. 152/2009.

Tato diplomová práce se zabývá charakteristikou, chemickým složením, zpracováním, využitím a zdravotními účinky rostliny pohanky seté. Praktická část je zaměřena na analýzu jednotlivých částí pohanky, jako kořen, stonek, listy a květ. Dále byly zkoumány pohankové výrobky (slupky, kroupa a mouka).
