Annotation in English The bachelor thesis is focused on the classification of traditional Andean crops, their botanical characteristics and chemical composition with emphasis on the bioactive substances contained. Due to their significant nutritional value, pseudocereals such as amaranth, quinoa, kaniwa or lupin are mostly applied in the food industry. The present work, however, focuses also on their emerging potential in the field of cosmetics, where their beneficial effects on the skin can be capitalized.
