Annotation Bakalářská práce je zaměřena na glukosinoláty v rostlinných produktech, jejich popis, strukturu, chemické reakce a produkty jejich hydrolýzy a zdravotní účinky těchto látek. V další části jsou uvedeny zdroje glukosinolátů v brukvovité zelenině (zelí, brokolice, hoř-čice, řepka, ředkev, růžičková kapusta, křen).
Annotation in English The bachelor thesis is focused on glucosinolates in vegetable products, their description, structure, chemical reactions and products of their hydrolysis and health benefits of these substances. Also the sources of glucosinolates in cruciferous vegetables (cabbage, broccoli, mustard, rape, radish, sprouts, horseradish) are described.
