Annotation Bakalářská práce se zabývá charakteristikou a vlastnostmi červené řepy. Je popisováno její pěstování, typy odrůd, škůdci a choroby. Dále je v práci uvedeno chemické složení červené řepy se zaměřením na betalainová barviva, její využití vzhledem k dlouhé skladovatelnosti jako zeleniny v čerstvém i tepelně upraveném stavu, a také pozitivní účinky na lidský organismus.
Annotation in English The bachelor thesis deals with the red beet characterization and its properties. The production, types of varieties, pests and diseases of red beet are introduced. Furthermore, there are described the red beet chemical composition with a focus on betalains pigments, its usage due to long storage as fresh vegetable and for culinary preparation, and also its positive effects on humans.
