Annotation Bakalářská práce je zaměřena na popis a charakteristiku zázvoru lékařského (Zingiber officinale). V zázvoru jsou obsaženy látky prospívající zdraví, účinnými látkami jsou silice a ostře chutnající gingerol. Zázvor se používá v několika podobách - čerstvý, sušený a mletý, pro přípravu čaje, tinktury, nebo obkladů. Zázvor se využívá jak v potravinářském, tak i v kosmetickém a farmaceutickém průmyslu.
Annotation in English The bachelor thesis is focused on the description and characterization of ginger (Zingiber officinale). Ginger contains health-protecting substances; active compounds are essential oils and gingerol with pungent taste. Ginger is used in fresh, dried and ground form, for tea, tinctures, or compress preparation. Ginger is utilized in food industry, cosmetics and in pharmaceutical industry too.
