Annotation Bakalářská práce se zabývá charakteristikou rostlinných olejů a tuků. V práci je uvedeno chemické složení lipidů, olejniny používané pro výrobu olejů a jejich zpracování. V další části se práce zabývá využitím rostlinných tuků v potravinářství a v chemickém průmyslu. Je také popsán význam tuků ve výživě člověka a změny, které u tuků probíhají v průběhu skladování a zpracování.
Annotation in English The Bachelor thesis deals with the characteristics of vegetable oils and fats. There are details about chemical composition of lipids used for the production of oilseeds and their processing. The other part of the work is focused on the use of vegetable fats in food and chemical industries. It also describes the importance of fats in a human nutrition and changes, of fat during storage and processing.
