V této práci se můžete seznámit s historií zeleninových salátů od starověku až po dnešní dobu, ve které se rozvinul trh s průmyslově vyráběnými zeleninovými saláty. Průmyslová výroba byla rozšířena díky novým technologickým postupům, zásluhou zvládnutí mikrobi-ologie, rychlého transportu a zdokonalením chladících distribučních řetězců. Najdete zde také nutriční vyhodnocení některých zeleninových salátů.

In this work, you can learn about the history of vegetable salads from antiquity to the pre-sent time in which the market with industrially produced vegetable salads was develo-ped.The industrial production was enhanced by new technological processes, thanks to the mastery of Microbiology, the rapid transport and the improvement of refrigeration distri-bution chains. There is also a nutritional evaluation of some vegetable salads.
