Annotation Cílem této diplomové práce je popsat antioxidanty a jejich biologickou účinnost. Mezi tyto látky se řadí vitamin C, vitamin E, karotenoidy ({β}-karoten, lykopen, lutein), BHT, BHA a další. Antioxidanty mají pozitivní vliv na lidské zdraví. Tyto látky se nejčastěji stanovují metodou HPLC. Byly vypracovány vhodné postupy a optimální chromatografické podmínky pro detekci antioxidantů.
Annotation in English The topic of this graduation theses was to describe antioxidants and their biologically activities. In these substances there can be found vitamin C, vitamin E, carotenoids as are {β}-carotene, lycopene, lutein; BHT, BHA and others antioxidants. Antioxidants have a great benefit for human health. These substances are the most frequently determined by the metod HPLC. This metod has a wide range of usage and also affords very good results. Suitable procedures for assessment of optima chromatographic method of antioxidants were developed.

Cílem této diplomové práce je popsat antioxidanty a jejich biologickou účinnost. Mezi tyto látky se řadí vitamin C, vitamin E, karotenoidy ({β}-karoten, lykopen, lutein), BHT, BHA a další. The topic of this graduation theses was to describe antioxidants and their biologically activities.
