Annotation Všade prítomnosť alergénov v ľudských potravinách spojená s ľudskou informovanosťou o potravinovej alergii zaručuje vhodné preventívne opatrenia na ochranu citlivých spotrebiteľov pred nežiaducim obťažovaním potravinovou alergiou. Pokusy o zníženie alebo odstránenie potravinovej alergie cez spracovanie potravín sa stretlo s rôznymi výsledkami.
Annotation in English The ubiquitous presence of allergens in the human food supply coupled with increased awarencess of food alleries warrants undertaking appropriate preventive measures to protect sensitive consumers from unwanted exposure to offending food allergens. Attempts to reduce or eliminate food allergenicity through food processing have met with mixed results.
