Annotation Tato diplomová práce se zabývá možnostmi využití monoacylglycerolů jako antimikrobiálních látek proti bakteriím rodu Lactococcus. Teoretická část je zaměřena na charakteristiku, klasifikaci a fyzikálně chemické vlastnosti monoacylglycerolů, jejich výrobu a požití. Jsou charakterizovány biogenní aminy, jejich vznik, možnosti stanovení, jejich výskyt a účinky na organizmus. Praktická část se pak zabývá vyhodnocením inhibičních účinků monoacylglycerolů a dekarboxylázovou aktivitou mikroorganismů rodu Lactococcus.
Annotation in English The inhibitory effect of monoacylglycerols on bacteria of the genus Lactococcus. Presented master thesis deals with possible use of monoacylglycerols as antimicrobial substances against Lactococcus bacteria. Theoretical part is focused on characterisation, classification and physico-chemical properties of monoacylglycerols. Their production and use are mentioned. Biogenic amines are characterised; their origin, occurrence, possibilities of determination and their effect on organism are presented as well. Practical part deals with both the evaluation of inhibition effect of monoacylglycerols and the decarboxylase activity of the Lactococcus bacteria.
