Tato práce se zabývá tvorbou biogenních aminů bakteriemi mléčného kvašení. Teoretická část je zaměřena na charakteristiku biogenních aminů, včetně jejich významu a toxických účinků, vznikem, výskytem v potravinách a dále jsou zde popsány mikroorganizmy, které je produkují. Nakonec je věnována pozornost také některým metodám stanovení těchto látek.
V praktické části této práce byl sledován vliv vybraných vnějších faktorů (přídavek laktózy, NaCl a aerobní/anaerobní prostředí) na tvorbu biogenních aminů kmeny Lactococcus lactis subspecies lactis. Stanovení biogenních aminů proběhlo pomocí iontově-výměnné kapalinové chromatografie, postkolonové ninhydrinové derivatizace a spektrofotometrické detekce ({λ} = 570 nm).

This thesis deals with formation of biogenic amines by lactic acid bacteria. Theoretic part deals with a common characteristic biogenic amines, with thein significancy and toxic effects, genesis, occurence in food. In other are described microorganizms producing biogenic amines. In the end is paied attention also to some methods of determination of these compounds.
In practical part of this work was obtained exogenous factors (lactose and NaCl concentrations and aerobic/anaerobic conditions) effect on a produce biogenic amines by strain Lactococcus lactis subspecies lactis. Determination of biogenic amines was analyzed by ion-exchange chromatography.
