Cílem disertační práce bylo pomocí dynamické oscilační reometrie a senzorické analýzy studovat vliv přídavku pektinu na viskoelastické a organoleptické vlastnosti tavených sýrů (40 % w/w sušina, 50 % w/w TVS). Dále byl zkoumán vliv vybraných fosforečnanových tavicích solí (jejich směsí) a nízkomolekulárních sacharidů na konzistenci tavených sýrů s pektinem. Přídavek pektinu způsobil zvýšení tuhosti a elasticity a snížení roztíratelnosti vzorku v porovnání s kontrolou bez pektinu. Zvýšení tuhosti systému díky pektinu nebylo lineární. Přídavek nízkomolekulárního sacharidu (D glukózy, D fruktózy, D galaktózy, laktózy, sacharózy) do tavené směsi (bez či s pektinem) způsobil vždy pokles tuhosti na obdobnou hladinu bez ohledu na povahu testovaného nízkomolekulárního sacharidu. Různé fosforečnanové tavicí soli způsobily vznik tavených sýrů rozdílné konzistence. Tuhost produktů se postupně zvyšovala přídavkem fosforečnanů v následujícím pořadí: monofosforečnany < polyfosforečnany < difosforečnany < trifosforečnany. Pektin vždy ztužil tavené sýry bez ohledu na typ použitého fosforečnanu či směs fosforečnanů a v přítomnosti všech testovaných nízkomolekulárních sacharidů. Chuť, vůně, vzhled a barva vzorku nebyly přídavkem pektinu zhoršeny.

The aim of this work was to evaluate the changes of consistency and sensory properties of processed cheese (40% w/w DM, 50% w/w FDM) with pectin by dynamic oscillation rheometry and sensory analysis. Further, the impact of various cosolutes and different phosphates (or their mixtures) on the processed cheese consistency with added pectin was examined. All samples with pectin (0.2 - 0.8% w/w) were more rigid, elastic and less spreadable compared to control without pectin. The dependence of processed cheese rigidity on pectin concentration was not linear. All cosolutes (D glucose, D fructose, D galactose, lactose, saccharose) caused the decrease in the firmness of processed cheese with or without pectin to the similar level regardless of their nature. Processed cheese made with different phosphates showed various viscoelastic properties. The rigidity of samples was increased by various phosphates in following order: orthophosphate < polyphosphate < diphosphate < triphosphate. The rigidity of processed cheese was always increased by pectin addition regardless of the phosphate type used or type of phosphate mixtures applied. The appearance and flavour were not worse by pectin addition.
