Náplní této bakalářské práce bylo pojednat o aplikačním potenciálu vysokoúčinné kapalinové chromatografie v kombinaci s hmotnostní spektrometrií (LC-MS), a to nejen v oblasti analýzy potravin, ale i jiných odvětvích. Úvodní kapitoly práce jsou zaměřeny na popis principu a instrumentace vysokoúčinné kapalinové chromatografie a hmotnostní spektrometrie. Dále je pojednáno o spojení hmotnostní spektrometrie se separačními metodami, včetně výčtu výhod a stručných principů tohoto typu analýz. Významnou část této práce tvoří kapitola pojednávající o vybraných skupinách organických sloučenin, které je možné pomocí LC-MS analyzovat a detekovat v různých typech potravinářských výrobků. V další části práce jsou stručně uvedeny příklady aplikovatelnosti této techniky v potravinářském průmyslu, včetně možností, které reálně nabízí, ale v současné době nejsou běžnou součástí analytické praxe. V poslední kapitole této práce jsou uvedeny možnosti využití spojení vysokoúčinné kapalinové chromatografie s hmotnostní spektrometrií v jiných odvětvích.

The content of this thesis has been to discuss about the application potential of high liquid performance chromatography with mass spectrometry (LC-MS), but not only in food analysis but also in the other branch. In the introduction this work has been focused on description of basic principles and instrumentation of LC-MS. The next discussed issue is coupling of mass spectrometry with separation methods including advantages and basic mechanisms of this analysis. One of the most important topics of this theses represent the chapter dealing with selected organic compounds which is possible to analyse and detect in various of foodstuff using LC-MS analyses. In the next part of this work, there are some brief examples of applications of these techniques in food industry including possibilities which they do offer to us but unfortunately which has not been used in analytical practise yet. The last chapter is based on description of possibilities of LC-MS applications in other areas.
