Bakalářské práce přináší popis struktury proteinů a jejich význam v biologických systémech. Detailně je popsána struktura laktoferinu, jeho funkce, využití a možnosti separace. Laktoferin je řazen mezi glykoproteiny s vysokou afinitou k iontům železa a s potenciální antibakteriální a antivirovou aktivitou. Neméně významná je jeho antioxidační funkce v potravinářských výrobcích, v doplňcích stravy a ve farmaceutických přípravcích.

The bachelor work presents description of protein structure and their meaning in biological system. The structure of lactoferrin, its function, utilization and possibilities of separation are described in details. Lactoferrin belong among glycoproteins with high affinity for iron and with potential antibacterial and antiviral activity. No less meaningful is a function
