1. Introduction to the biomacromolecules. 2. Importance, function and classification of biopolymers (proteins, carbohydrates, nucleic acids). 3. Chemistry of proteins, amino acids, peptide bonds. 4. Structure of proteins. 5. Methods of determining the primary, secondary, tertiary, quaternary structure of biopolymers. 6. Basic fibrillar and globular proteins; collagen, structure characterization, chemical reactions, natural cross-linking, hydrolysis. 7. Keratin, characterization, methods of hydrolysis. Elastin, albumins, globulins. 8. Enzymology, classification, nomenclature of enzymes. 9. Coenzymes, structure and function of enzymes, kinetics, application of enzymes, biotechnology. 10. Carbohydrate chemistry, glycosidic bond. 11. Mono, oligo, polysaccharides. 12. Hydrocolloids and their use. 13. Cellulose, starch, pectins, use in cosmetics. 14. Hyaluronan, alginates, chitosan.
