Course content

1. Gastrointestinal tract ? structure, function, motility, neural and hormon control. 2. Human energy requirements, incorrect energy balance (obesity, malnutrition). Assessment of body weight adequacy. 3. Specific importance of basic nutrients for human nutrition, their positive and negative effects in case of excess intake or deficiency. 4. Nutrition recommendations for the population, nutrition standards, graphic forms. 5. Role of proteins in human nutrition, their digestion, functions in human body, diet sources, optimal daily intake and the reasons for increased protein intake. 6. Role of carbohydrates and dietary fibre in human nutrition, digestion, functions, optimal daily intake and diet sources. 7. Role of fat and cholesterol in human nutrition, digestion, functions in human body, optimal daily intake and diet sources. 8. Role of vitamins in human nutrition and their sources. 9. Role of minerals in human nutrition and their sources. 10. Role of water in human body, water intake recommendations, suitable sources, the most common diuretics in the diet. 11. Specific nutritional requirements through the life cycle (childhood and adolescence, pregnancy and lactation, older adults). 12. Alternative diets ? benefits and risks. The role of dietary supplements in human nutrition. 13. Food allergies and intolerances. 14. Human nutrition in the prevention of diseases of civilisation with a focus on diabetes and osteoporosis. 15. Human nutrition in the prevention of diseases of civilisation with a focus on metabolic syndrome and diseases of the cardiovascular system (atherosclerosis, hypertension, hypercholesterolemia).
