Course content
- Characteristics of non-traditional, minor and novel foods; food quality requirements. - Chemical composition and quality of non-traditional, minor and novel plant-based foods (edible flowers, mushrooms, algae, pseudocereals, fermented foods etc.). - Chemical composition and quality of non-traditional, minor and novel animal-based foods (edible insects, bee products, fermented foods etc.). - Extraction and processing of raw materials applicable in the production of non-traditional, minor and novel foods. - Research and development of non-traditional, minor and novel foods. - Preparation and evaluation of experiments using modern ICT methods.
